Rose Sauce for Peter
The challenge here was to replace the standard wine-raisin-clove sauce with something alcohol free which would be good with chicken and provide more color for this remove. This is an original improvisation.
4 cups rose syrup (Kassatly Chtaura brand)
12 cups water
4 cups pomegranate juice
1 1/4 tsp cloves
6 2/3 cups vegetable broth (Health Valley Fat Free)
4 packets Fruit Jell (pectin) for thickening
This was boiled and canned. If a source of cherries or plums should arise they can be added to the sauce.
