Good Karma Curry Burritos
Bring rice and water to boil in a large pot. Open the cans of corn and stewed tomatoes, drain off the juice, and add some of the juice to the pot. Boil together. Once half the moisture is cooked into the rice, add curry and garlic to the rice and mix well. When virtually all the moisture is gone, add the corn, tomatoes and beans. Keep stirring to distribute all the ingredients evenly. The mixture should now be very soft and moist. Lay out the tortilla shells. In the center of each, place a heaping spoonful of the rice mixture. Then top with onions and salsa. Fold and roll up the tortilla.
