Cheeseburger Pie with Mashed Potato Crust

spacer 3 cups mashed potatoes, seasoned with salt and pepper
1/3 cup onion, minced
8 slices American cheese
1 lb ground beef
1 can tomato sauce (8 oz can)
1/3 cup green pepper, chopped
1/3 cup onion, chopped
2 cloves garlic, finely chopped
1 tsp beef bouillon crystals
2 eggs, well, beaten

Preheat oven to 350 degrees.

Mix the seasoned mashed potatoes with minced onion and with them sculpt a shell in a buttered 9" pie pan. Bake in preheated 350 oven for 15 minutes.

Leave oven on at 350.

Cut 6 slices of cheese into pieces.

In large skillet, brown meat; pour off fat. Add tomato sauce, green pepper, onion, garlic and bouillon; cook and stir until bouillon dissolves. Remove from heat; stir in eggs and cheese pieces.

Turn into prepared shell.

Bake 20 to 25 minutes or until hot. Arrange remaining 2 slices of cheese on top. Bake 3 to 5 minutes longer or until cheese begins to melt. Garnish as desired.

(If using regular 9" pastry shell instead of mashed potatoes, prick it and bake it 8 minutes at 425 before filling)
