ONIONS, YELLOW, WHITE, PEARL, RED, OR SWEET Pungent (Sweet)
Pearl onions, Spanish onions: red, white, yellow, Sweet onions: Walla Walla or Vidalia
1 pound raw = 2 medium or 1 extra large
1 medium (4 oz) = 3/4 to 1 cup
1 large (8 oz) = 1 1/2 to 2 cups
3 1/2 pounds onions = 4 oz dried 1 medium yellow onion, chopped = 1 1/4
1 medium yellow onion, chopped and sauteed = 3/4 cup
Should have hard, firm, dry skins, small necks and papery outer scales free of soft and moldy spots
Store at room temperature in bowls or baskets
To freeze, onions do not need to be blanched. Just chop them and freeze them.
