Preheat oven to 400.
16 medium Carrot?s (about 2 pounds)
Peel and cut carrots into sticks (about 4 inches long).
2 tsp Olive Oil?
1 tsp salt
In a bowl, toss with olive oil; spread carrot sticks in a single layer on a parchment-lined baking sheet. Sprinkle with salt. Bake until fries begin to turn crisp, 20 to 25 minutes. Serve warm.
