I thought this was good, but Tim didn't eat much, and Mark didn't eat any. Mark prefers halibut or flounder. He wants his fish overcooked, and commented that there wasn't enough egg to get the coating to stick. Perhaps the problem was the lateness of the hour it was served. 4 filets (3/4 pound) would have still been too much for our family. Next time buy 3 filets. The amount of crumb above would have been a better fit. I had to extend with plain cornmeal. I didn't pat the fish dry after rinsing, so that's part of why the coating didn't adhere better. Also, shake in ziploc bag, don't try to crumb coat in the pie tin.

1 Egg? white 1 Tbls. water 3/4 cup corn flake crumbs 1 1/2 lbs. white Fish? fillets 2 tsp. chopped fresh Parsley? 1/8 tsp. lemon pepper 2 Tbls. melted Butter?
- In a small bowl, beat the egg white with water; set aside.
- Place crumbs in a shallow dish; set aside.
- Rinse fish and pat dry; dip fish in egg mixture then roll in crumbs.
- Place fillets on a baking sheet coated with non-stick cooking spray.
- Sprinkle with parsley and lemon pepper, then drizzle the butter over the fillets.
- Bake in a 400 degree oven, uncovered, for 20 minutes, or until the fish flakes easily with a fork.
NOTES : This works well with all white fish.
I baked this at 415 due to our oven's coolness. I added another 12 minutes to the baking time - at 20 minutes it wasn't done.

Easy and healthier way to get crispy tasty fish. I have used mostly mild whitefish like tilapia with great results. Don't be scared by the number of ingredients—it is mostly spices and herbs. Please adjust the spices, especially salt, to your taste. I have tried to post a balanced blend here but feel free to adjust mild, spicy, lower sodium etc... by mama's kitchen

1 lb tilapia fillets
Milk mixture
1/4 cup Milk? 1/2 teaspoon Vinegar? 1 tablespoon brown Mustard? or honey mustard
Breading
1/2 cup cornmeal 1 teaspoon salt 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon Paprika? 1/2 teaspoon Thyme? 1/2 teaspoon Black Pepper? 1/2 teaspoon Cayenne? pepper, adjust to your taste
Mix milk, vinegar and mustard and let set for 15 minutes. This will make a mustardy, buttermilky dressing to coat the fish.
In a separate bowl mix cornmeal with all the seasonings.
Dip fish fillets in the milk mixture and then in the cornbread mixture.
Spray broiling pan with cooking spray or brush with a little olive oil.
Place fillets on prepared pan and place pan under broiler 4 inches from heat.
Broil for 4 minutes per side or until fish flakes easily with a fork.
Crispy Mountain Batter Mix

1/4 Cup dry Nora Mill's Crispy Mountain Batter Mix Paper or plastic bag 1 lb. of fresh or thawed fish Margarine
Moisten fish in water. Pour Nora Mill's Crispy Mountain Batter Mix into bag and drop fish into bag, shaking bag to coat fish evenly. Melt enough margarine to cover bottom of a shallow pan. Arrange fish in a single layer, turning once to coat both sides with margarine. Bake in a 350 ° F oven 15-20 minutes or until done.
