1 1/2 tbsp Olive Oil?
1/2 lb fresh Button Mushroom?s, sliced
1/2 cup Onion?, chopped
1/2 cup Cabbage?, finely chopped
1 clove Garlic?, minced

Heat olive oil in medium skillet over low heat. Add vegetables and saute for 10 minutes.

1 6-oz can Tomato? paste
1/3 cup water
1 tsp fresh Basil? or 1/2 tsp dried
1/2 tsp salt
1/4 tsp Black Pepper?
1/8 tsp Celery Seed?

Add tomato paste, water and spices and mix well. Simmer, covered, for 20 minutes.

1 1/2 tbsp Olive Oil?
1 1/2 cup uncooked brown Rice?

Heat olive oil in large skillet. Add rice and saute until light brown.

3 cups hot water

Add hot water, then stir in vegetable mixture. Simmer, covered, for 10 minutes longer or until rice is tender.

Note: there is no way brown rice is done with only 10 minutes of cooking. This has to be an error. I would not mess with the vegetable simmering time being separate from p. 102 The American Cancer Society's Healthy Eating Cookbook (c) 1999 (UFL 641.563 AME)
