1 medium Onion?, chopped 1 small Green Bell Pepper?, chopped 1 tbsp Olive Oil?
In a frypan, saute in oil until soft, 5 minutes.
2 cups cooked Black Beans? (or 1 can, drained) 1 1/2 cups Chicken Stock? 1/2 cup uncooked Rice? 1/4 tsp dried Thyme? 2 cloves Garlic? 1 Bay Leaf?
Add and bring to a boil, reduce heat and simmer covered until rice is done; 20 minutes for white rice, 40 for brown rice. Remove from heat. Remove bay leaf.
1/2 cup sharp Cheddar Cheese?, shredded
Sprinkle on top and serve.
